Italian Style Beef Stew

INGREDIANTS:

  • 1 onion
  •  1 garlic clove sliced
  •  2 tbsps olive oil
  •  300g pack beef stir-fry strips (or use beef steak, thinly sliced)
  •  1 yellow pepper, deseeded and thinly sliced
  •  400g can chopped tomatoes
  •  sprig rosemary
  • chopped handful pitted olives
  1.  Line a shallow 7inch tin with foil
  2.  Crush biscuits
  3.  Chop dates
  4. Heat butter & syrup together until melted
  5. Stir in crushed biscuits/sultanas and dates
  6. Mix well
  7. Spoon into tin
  8. Press tightly with back of spoon
  9. chill for 1hr 10
  10. Melt chocolate, spoon over mixture and chill
